Gluten Free, Protein Banana Bread

Banana bread gang where ya at?! 🍌🍞 i caved and jumped on the quarantine banana bread train. If you haven’t yet, you should! With this walnut chocolate chunk protein banana bread (that’s also good for digestion!) I promise you’re gonna want to make this ASAP. ⁣⁣


INGREDIENTS:


Deets below 👇🏼⁣⁣

2 cups almond flour ⁣⁣(@bobsredmill)

1/4 cup tapioca flour⁣⁣

3 small ripe bananas (about one cup)⁣⁣

3 tbsp coconut sugar⁣⁣

3 scoops @nuzest_usa x @lilsipper vanilla digestive protein blend⁣⁣ (or any protein)

2 eggs⁣⁣

2 tbsp coconut oil ⁣⁣

1/4 tsp sea salt⁣⁣

1 tsp vanilla⁣⁣

1 tsp baking soda ⁣⁣

Lots of chocolate chunks I use enjoy life (or chips) ⁣⁣

Chopped walnuts for topping (optional)⁣⁣

⁣⁣


DIRECTIONS:


Preheat oven to 350

Line bread dish with parchment paper or grease with coconut oil.

Add dry ingredients to a bowl and combine.

Add wet ingredients and mix then add dry and wet together.

Pour in chocolate chunks.

Then pour batter into bread pan and top with more chocolate chunks and walnuts! Bake for 40-50 minutes or until fork comes out clean.

(Can cover with foil to prevent top from browning) enjoy! 😋
