These healthy chicken quesadillas take 10 minutes to make and they are loaded with flavor.
One thing I’m NOT giving up in 2021 is carbs. I’m determined to show that carbs can be a part of a healthy diet. Actually, they’re pretty essential.
Carbs are your main source of energy and fuel.
They help brain function, nervous system function and more. Carbs help with muscle recovery (it wasn’t until I started eating more carbs I saw a change in my body from my workouts) its common to hit a plateau if you’re not consuming enough carbs.
Oh and carbs make you HAPPY and raise energy levels. So let’s start fueling our bodies with the carbs we crave in 2021 and put a stop to carb shaming.
Quality carbs are important and thats why I love @angelicbakehouse sprouted grain products that are also vegan, non-GMO and full of flavor.

INGREDIENTS: (that I used)
2 Angelic Bakehouse Sprouted Grain Tortillas

one large, heaping handful of spinach
1/4 cup vegan mozzarella cheese
Sprinkle of organic Mexican cheese blend
Salsa for dipping
First, start by satueeing your spinach and any other veggies you are using.
Once wilted a little bit, add in the shredded chicken to warm.
Once those are cooked, clean the pan or use a different one and place the stove on medium heat while prepping the pan with avocado oil.
Place one tortilla into the pan.
Top with chicken and spinach mixture.
Sprinkle cheese over the mixture.
Top with the other tortilla.
Cook for 5 minutes and flip for another 5 minutes.
Serve immediately and top with avocado, tomato and cilantro is desired.
