Healthy Mongolian Beef

Sometimes you just need a childhood favorite, healthified! I was craving a very flavorful meal to switch it up. I'm always switching it up in the kitchen with different flavors so we don't get bored/unmotived! Which is really easy to do during quarantine. This was the perfect switch up that was FULL of FLAVOR. Super easy to make, only a few nourishing ingredients, gluten free and paleo friendly!


INGREDIENTS:


1 lb. ground beef

2 cups white rice

2 cups spinach

1/3 cup bone broth or veggie broth

1/3 cup coconut aminos or amino acid

1 tsp apple cider vinegar

1 tbsp coconut sugar

1 heaping tbsp tapioca flour

3 garlic coved, minced

1 tsp ground ginger

pepper to taste







DIRECTIONS:


Cook rice in instant pot or according to package.

While rice is cooking -

In a large skillet, cook ground beef on medium heat until cooked through. Season with ginger, garlic and pepper (I would hold off on salt if using amino acids).

Once cooked, set aside.

In a separate bowl, whisk together the aminos, broth, apple cider vinegar, sugar and flour until combined.

With enough fat to coat the pan, add the liquid mixture to boil for 1 minute and stir.

Add the ground beef back into the pan along with 2 cups of spinach and simmer for 2-4 minutes or until spinach is wilted. Mix and serve over rice!

Can top with green onion for extra flavor.
