Hearty Taco Soup



Soup really does warm the soul. This hearty taco soup was so quick and easy to throw together and it turned out so tasty!


I made this in the instant pot in just under 15 minutes! I sautéed the ground chicken until almost cooked through which took maybe 5 minutes. Once that was finished the rest of the ingredients were dumped in and the lid was sealed for 8 minutes! I let the instant pot depressurize for 3-5 minutes by itself and then quick release.


My instant pot is truly a saving grace. When you don't feel like cooking just throw it all in the pot, put the lid on and usually you have dinner in less than 20. You just can't beat it for those nights you have no energy to spend time in the kitchen.

If you don't have an instant pot, no worries! You can make this soup in the crock pot or over the stove you'll just have to cook it longer. & you'll have to google how long to cook it because I haven't tried ;).


I used ground chicken becuase it is what I had available. you can also use shredded or any kind of protein you desire. For vegan, opt out of meat and use veggie broth instead of chicken broth. Since there are already beans included, you're good to go!




INGREDIENTS:


1 lb. ground chicken

1 bag bonafide provisions chicken bone broth (can sub for beef or veggie)

2 cups water

2 cups fire roasted corn

1 can black beans

1 chopped red pepper

1/2 onion, chopped

1 handful spinach

2 tbsp greek yogurt

1 cup rice (optional)

1 tbsp chili powder

1 tbsp cumin

1 tsp paprika

Salt and pepper to taste


Toppings:

Sour cream or greek yogurt

Cilantro

Jalapeños

Cheese

Tortilla Chips



DIRECTIONS:


If using an instant pot, put it in satue mode and add some avocado oil to the bottom of the pot.

Cook chicken or desired protein until browned (doesn't need to be fully cooked).

While chicken is cooking, prep veggies by chopping them.

When chicken is done, add all the ingredients to the pot (except the greek yogurt, rice and the spinach) and pressure cook for 8 minutes.

Release pressure after 3-5 minutes.

Add 1 tbsp greek yogurt (optional) and a heaping handful of spinach.

Stir it up until yogurt is dissolved and spinach is wilted and serve!

Top with your favorite toppings. I used greek yogurt, jalapeños, chips, cilantro and cheese for the boyfriends.
