Loaded Nachos (DF & GF)



⁣Nachos are one of my favorite meals honestly. You can’t go wrong with any toppings. The options are endless and lets be honest there is just something about melted cheese and crunchy chips. 😋 These loaded nachos are gluten free and dairy free! Made with organic corn tortilla chips and dairy free cheese.


These *healthier* nachos are so fast to prepare. Only 5 minutes in the oven and the time it takes to cook the meat and you're set! Easy, delicious, flavorful, FAST dinner or appetizer for any occasion!


The first step is to line a baking sheet with tortilla chips. I like to line my baking sheet with parchment paper but you don't have to. The amount of chips you use will depend on how many people you want to serve. I used a whole bag of chips for two people and two bags for 4. We finished them each time. Double the cheese and meat if you're feeding more people too!


Technically, you can use any kind of tortilla chips, but if you want to keep these gluten free, use organic corn tortilla chips or grain free chips. You can also use any queso or cheese but if you want to aim for dairy free I recommend Siete queso and a vegan shredded cheese. You can make these completely vegan by adding tofu instead of meat!

INGREDIENTS:


1 bag of organic corn chips ⁣

1 lb. ground chicken (or protein of choice) ⁣

1 jar @sietefoods queso ⁣

Shredded cheese (vegan or regular) ⁣

For toppings:⁣


Chopped lettuce ⁣

Chopped tomatos ⁣

Cilantro ⁣

Jalapeno ⁣

Avocado ⁣

Your favorite salsa ⁣



DIRECTIONS:


Cook the meat in a skillet. ⁣

While preparing meat, preheat the oven to 350 and add the bag of chips to a parchment lined baking sheet. ⁣

Once the chicken is cooked, spread It over the chips evenly and then sprinkle cheese over chicken (use as much as you want!)⁣

Bake the nachos in the oven for about 5 minutes or until cheese is melted to your liking. ⁣

While baking, warm the queso in the microwave or on the stove. ⁣

When nachos are finished, pour the entire jar of queso evenly over the nachos and top with all the toppings! I usually make my own guac and put it on the side with a side of salsa for dipping.
