Maca Chocolate Chip Banana Muffins

When life is bananas make it muffins 🍌🧁

question - who has YET to make something with bananas since quarantine?! IF there’s anyone left out there, I GOT YOU. ⁣

Gluten Free. Moist. Refund Sugar Free. Delicious. ⁣


INGREDIENTS:


1 cup mashed banana (about 3) ⁣

4 eggs ⁣

1/4 cup @lakanto maple syrup ⁣(can use maple syrup or honey)

1 tbsp Apple Cider Vinegar ⁣

1/2 cup coconut floudr

1/4 cup tapioca flour⁣

1 tsp cinnamon ⁣

1 tbsp @shopkarenberrios maca powder ⁣

Dash of salt ⁣

2 tsp baking powder⁣

1/2 tsp baking soda⁣

Chocolate chips (optional)⁣

Nuts (optional)⁣


DIRECTIONS:


Preheat oven to 350.

Spray muffin tin with nonstick spray or use muffin cups. ⁣

Mix together all wet ingredients in a medium sized bowl until smooth texture.

Add the dry ingredients and stir until a batter forms.

Allow the batter to sit for 5 or so minutes to rise.

You can mix in the nuts/chocolcate chips - I just topped them!

Fill each muffin cup almost full and top with chocolate chips and walnuts or your favorite toppings!

Cook for 25-27 mixtures or until toothpick comes out clean.

Let sit until cool!!
