These cheesy, vegan, sweet potato nachos for the best healthy comfort meal ever! 🍠🥑🌶🍅🧀🤤
Nachos are one thing I'll never get sick of eating. They're perfect for any occasion or to have for a meal!!! Never had nachos for a meal? You are missing out my friend! They are the easiest comforting meal ever! And the best part - you can customize them completely! Don't get me wrong I love my tortilla chips but I took these up a notch with nourishing sweet potatoes. The recipe is actually super easy!

3-4 large sweet potato, cut into circles
1 jar @sietefoods vegan queso
1/2 cup vegan shredded cheese
1 can black beans
1/4 cup chopped tomato
Chopped spinach, cilantro, jalapeño and sliced avocado to top.
Preheat oven to 400
Cut sweet potatoes and add them to a large bowl with 1/2 packet @sietefoods taco seasoning and 1-2 tbsp avocado oil (or make your own spice mixture).
Mix until sweet potatoes are fully coated and place them on a parchment lined baking sheet.
Cooked for 35-45 minutes flipping halfway.
How long you cook depends on how crispy you want them! Mine were softer and took about 35 minutes.
Once potatoes are cooked, add shredded cheese and place back in oven until melted.
Top with queso (melted/warmed), black beans and toppings! Add salsa on the side for dipping and enjoy!!! 😋
