Zesty Lemon Bars (GF)



Lemon bars were one of my favorite desserts growing up. I remember making them in the summer with my mom and fighting my brothers for the last bite! Light, refreshing and delicious! sometimes lemon or fruity desserts are a nice to incorporate into your diet for different flavors and variety!


I used an old recipe and made it NEW! Gluten free flour (but you can totally use regular!). I swapped out the sugar and used maple syrup as a sweetener (besides the powdered sugar of course.) and I added more lemon than before, which was a great idea in my opinion!!!! See how easy this recipe is below. Perfect to make with kids or family and enjoy all summer long!




INGREDIENTS:


crust:

1/2 cup butter (room temperature)

1 cup gluten free 1:1 flour (or regular)

1/4 cup powdered sugar

filling:

1/2 cup lemon juice (3-4 lemons)

Zest of two lemons

3 eggs

1 cup maple syrup

1/2 cup gluten free 1:1 flour

Extra powdered sugar for topping

1 cup maple syrup


DIRECTIONS:

Line an 8x8 pan with parchment paper and preheat the oven to 350 degrees.

With an electric or hand mixer, combine all crust ingredients. (Its important that butter is closer to room temperature here for better dough turn out).

Beat until combined and a dough forms.

Add dough to freezer for 10 minutes to let set.

The press the dough into the 8x8 pan and cook for 15-20 minutes or until crust is light golden brown.

Add the lemon juice, lemon zest, eggs, maple syrup and flour to a medium bowl and mix until well combined. Mix will be watery, thats ok!

Pour over top of slightly cooled crust.

(The filling may run over the edges and thats ok!)

Once filling is poured over the crust, return the pan to the oven and cook for 25 minutes.

Let cook and sprinkle your desired amount of powdered sugar over the top.

Optional to top with lemons and more zest

Let cool before serving for best turn out.

Store in fridge for a min of 1 hour to cool.
